Antioxidative activity
The hydrolysates of yellowfin sole frame protein had both antioxidative activity and a synergistic effect with α-tocopherol using the linoleic acid in water/alcohol system. The peptide RPDFDLEPPY was isolated from the highest active fraction, so the peptide was a potential antioxidative peptide ( The antioxidative activity of pure peptide was not determined ).

The yellowfin sole frame protein hydrolysate was prepared with mackerel intestines crude enzyme for 3 h at pH 10.0 and 50℃, and subsequently hydrolyzed with pepsin for 3 h at pH 2.0 and 37℃ after the pH of the solution had been adjusted to 2.0 with HCl.
