Antioxidative activity
(1) The bioactive sequence of the peptide is Gly-Glu-Hyp-Gly-Pro-Hyp-Gly-Pro-Hyp-Gly-Pro-Hyp-Gly-Pro-Hyp-Gly. Hydroxyproline (Hyp) is a product of hydroxylation of proline. (2) The antioxidative activity of the purified peptide in a water/alcohol system was examined by the TBA method and the peptide showed potent antioxidative activity (MDA concentartion, about 2.63 × 10^-7 M).

Assay & Model

Enzymatic hydrolysis
Hydrolyzed with serial digestions in the order of Alcalase, Pronase E, and collagenase using a three-step recycling membrane reactor. The fraction from the second step, which was hydrolyzed with Pronase E, showed potent antioxidative activity.
