ACE-inhibitory activity
Protease hydrolyses of an Okara protein yielded antioxidative activity against the peroxidation of linoleic acid in an aqueous system at pH 7.0 and the peptide AY was isolated from the hydrolysate. It showed antioxidative activity to some degree, but less than that of carnosine (data not shown).
