Evidence 1 Activity

Activity

Antioxidative activity
Protease hydrolyses of an Okara protein yielded antioxidative activity against the peroxidation of linoleic acid in an aqueous system at pH 7.0 and the peptide ADF was isolated from the hydrolysate. It showed antioxidative activity to some degree, but less than that of carnosine (data not shown).

Assay & Model

linoleic acid peroxidation
Enzymatic hydrolysis
Peptide obtained by hydrolysis of Okara protein by use of enzymatic preparation Protease N for 6 h.
